Slow Cooker Sunday: Chicken Nachos

It's one of my favorite days today. Slow Cooker Sunday. I had a request for a huge plate of nachos to go along pajamas and football today. So we're changing it up and making chicken nachos.

Here's how I made the chicken:


1 package of chicken (1 pound)
1 1/2 Cup of chicken broth
1/2 packet of Taco Seasoning
1/2 packet of Ranch Seasoning


Put in all in the slow cooker...give it a stir...cook low for 6-8 hrs or high for 4 hrs.

**My favorite tip I learned is to take the whole cooked chicken breasts out of slow cooker (hot doesn't matter) and put into your Kitchen Aid Mixer with the paddle attachment. Turn it on low speed and viola!! Shredded chicken a whole lot faster than using 2 forks. Just put it right back into the slow cooker with all the good juice and flavor and ready to serve!**

I put chips, chicken, jalapenos and cheese in the oven at 350 until cheese melted and then added lettuce, tomato, sour cream. Any toppings would be fantastic.

Honey Crunch

Look what my Honey brought home. He knows I've been miserable trying to shake the same headache for a week now.



That was sweet. And I decided to make one of my favorite sweet snacks. Speaking of Honey...here's the recipe for Honey Crunch: 


Not only did I feel better in minutes, it also made the house smell like fall. Lovely.

Ham and Cheese Stuffed Apples

As promised, here is the recipe for the Ham and Cheese Stuffed Apples. I never was a huge fan of baked apples. Mainly because I don't like raisins and normally every baked apple recipe has raisins in it. I saw some alternative toppings in the Everyday Food magazine and wanted to try this. I do love a slice of apple on my grilled cheese so I figured this wasn't far off.

2 apples, cored and halved
2 slices of deli ham, cubed
3 Tbsp of breadcrumbs (I used Panko)
1/4 cup shredded cheese
1 tsp Dijon Mustard
1 Tbsp of butter



Mix breadcrumbs, ham, cheese, mustard and butter in mixing bowl.

Lay apples on baking sheet.

Top with ham topping and bake 350 degrees for 30 minutes.




 I could've let them stay in longer to get toastier, but I was starving and pulled them out after 25 minutes. Man, were they good!

So, I came across this recipe and it was delicious, easy, quick and cheap! And Otto loved it. We will definitely make this again.

Homemade Teething Biscuits

And here we are again. Cutting teeth. We're on tooth number 5 now. That explains the runny nose and sleepless nights. Poor thing. 

It's rainy and gross out so I'm not leaving today. Looking through the Feed Me I'm Yours baby food book, I found a recipe for Homemade Teething Biscuits. I had all of the stuff already and it couldn't be easier. Here it is:

Eggless Teethers:
1 cup instant baby cereal
1 cup flour (I used whole wheat)
1 cup fruit juice (I used apple carrot juice)

Stir together ingredients and roll out on floured surface. I used my animal cookie cutters instead of the recommended circle from top of juice glass. Bake at 350 for 40 minutes or until hard.


The squirrels are for Walter. He has all of his teeth, but loves squirrels.

Weekly Meals

It's here! 
I recently purchased a LivingSocial deal for an organic grocery delivery service. The groceries come from a local farm in Mason and you can order produce boxes based on size. They delivery weekly, or biweekly. I ordered the small produce bin and you are at the liberty of what is in season and what they give you each week. I received mine on the front porch yesterday so it's time to plan my weekly meals!
Here's my bin:


Butternut squash, apples, pears, broccoli, basil, grapes, kale, potatoes, tomatoes and avocado.


This weeks meals:
#4 Ham and Cheese Stuffed Apples (Recipe to follow - Brenda original)

{I'll have plenty of squash left over for a Baby Bullet Bonus. 
2 cups of squash, peeled and boiled until soft. Add 1/2 cup of water and viola! 1 week's worth of dinner for Olive.}

For lunch I'll have the BLTs with Avocado. Yum!

Recipe Review: Pot Roast Sliders

I wouldn't say my husband is picky. He'll try anything, and he'll always tell me it was great. But I really know what he thinks when I see him eat a peanut butter and jelly sandwich after he's tried my meals. 

Pretty much buffalo anything, chili, and sliders are always safe. I found this recipe and made it last night. He LOVED it. I thought it was pretty tasty too. A little more salty than I normally eat (must be the package seasonings), but it was great and we're having the leftovers in baked potatoes tonight.


I skipped the chili mayo and cheese and spread the buns with the Laughing Cow Chipotle Queso 35 calorie cheese spread because I had it already and it was great!
